Here is an undercounter light I found at Lowes. I am not suggesting these instead of led bulbs or fixtures but believe they could be good additional convenience lighting for areas you may not now have wired.
The light throws an elongated beam -- it uses a lens -- and is quite bright.
They don't do a good job of describing how it attaches magnetically to the base and of how it can be swiveled from the front to the back of the counter, so I posted some photos.
The light goes off after 30 minutes -- makes it pretty neat to use as an exit light or bathroom light.
I picked up four and plan to put one in the closet also. Then if you need to find something on the floor of the closet -- just pull the light off the base and use it hand-held.

We may also mount one in our car -- under the passenger side dash -- to better illuminate the floor when necessary and to keep a hand-held light close by.
