My Honda EV4010 generator runs fine except:

When a high amp load is required( like when the A/C compressor
kicks in ) the generator runs Ok BUT when the A/C compressor kicks out, the RPM goes wild (high and low, again and again) until the A/C compressor kicks in again...and the RPM returns to stable condition...

Nothin' runs like a Honda! Sounds like the governor needs to be adjusted.

Is that a variable speed (inverter)  generator?  See if there isn't   control on the PC board called 'loop gain' or something like.  Try turning it slightly in either direction and see if the condition doesn't get better in one direction.

That's what I thought(governor)...Do you know how to adjust it ? Where is the adjustment ?

On that one, I dunno.  It may even be mechanical.  But a hypersensitive governor system will hunt like that.  My Junkerac is currently doing it, but I'm in Illinois at a show this weekend, can't fiddle with it till I get home.

I had a wild generator (Kohler) which I thought was a governor problem, but in the end was a mis-torqued cylinder head( finger-tight, actually).
