Is there a way to mount seatbelts to the rear facing dinette seat & rear couches?

I imagine that you could mount seatbelts to the rear facing dinette by drilling mounting points to the frame just behind the original front seatbelt mounting locations. I cannot think of any other location that would work quite as well, or if there are any mounting nuts already in that location. You could easily check by removing the passenger's side wheel liner to see under that area.

I'm assuming you're talking about a 26' GMC (with the dinette behind the passenger seat).

belts for the dinette.

I sure couldn't ride in the rear facing seat with getting nauseated.

I'm the other way, John. When we used to
ride trains on trips back in the 40s and
50s, if I rode facing forward, the rapid
flashing by of trackside objects created
what I now know was vertigo and that made
me sick. Being able to flip the seatbacks
over and ride in reverse cured the problem.
Riding in the back seat of a car caused
a similar problem. The solution to that
was simple; just read and don't watch the
stuff whizzing by.
