I just finished a long and interesting person from the Technical - Applications group of Firestone/Bridgestone.
According to his information the 8.75ER16.5 is listed as continued availability, but not suggested for application (meaning don't build anything new that will require it). It is his opinion that the volume is still high enough that there will be supply for many years to come. But he did caution that warehouses are not likely to hold much stock and back-orders should be expected.
Translation:
If you are planning to buy 8.75*16.5 soon, have your local dealer start looking. He may need to place an order to get an promise date, and that may be several months in the future.
I also asked about 225-75RE-16. His data shows a significant demand. They will be readily available for a long time.
As to larger rim sizes, yes, they are out there, but they are not coming on in truck load ranges as fast as was expected. These are still a premium tire that people that really use trucks are not eager to roll out the extra expense to get.
And that is What I Know TODAY.
Disclaimer: In today's world, companies have to stay very agile to stay in business. All of the above is really controlled by:
A - Market forces (I don't think any demand can change that fast)
B - Management Fiat (a new guy may have different view and change things - fast)
Me, I'm going to keep looking to acquire 16" steel but if I don't have them when tires get near problem age, I will find some new Transforce to put on.

Gee, Matt --
With all the time that you have spent and are currently spending looking for the elusive 16" steel wheels why don't you just get a part time job as a Walmart greeter and save up your pay, albeit small, toward some 16" Alcoas or Eagles. You'll probably get 16" wheels this way in less time. :)

When I bought my GMC 18 months ago, I went through the "tire tales". Sears
showed them in warehouse stock and the sales rep said he would check
availability. He came back with no longer available. Next I went to the
Firestone store and he said they don't stock and wouldn't order them. I
looked around and his waiting area was empty. Then I wet to an independent
shop. On the wall in the sales/waiting area there was a brand new tire
hanging on the wall with a sign over that said would you buy this tire? on
the flip side of the sign it explained how to read the date codes. Tire
looked great but, it was 8 years old. This guy took more time with me
talking tires then the rest combined. He had two in stock - when he checked
the date codes they were four years old. Said he will send them back. He
went on the computer, made a call and said he found 6 tires in two different
warehouses. All tires were Firestone. Non were less then four years old.
He convinced me to bit the bullet and go with 16" wheel and tires. It's
amazing how fast Jim K. can send you a set of Eagles. And 16" tires are a
lot easier to find.

Walmart won't hire me, I'm white and I don't speak Spanish.
Even if they did, I would only have to dedicate all the free time I have (I am HAC fostering three grandsons 4, 6 & 7) (at Mi Min wage - taxes and expenses) from now until December to buy a set of non-centered Eagles. I still would not have gotten the work done on the coach that didn't get done last winter for the above reason. I can do all this research on the web and the phone and still watch - needs constant surveillance - the 4yo even when "knapping".
Yeah Emery, I've thought about it and even applied lots of places. This is Michigan. They publish 15% unemployment, and they are about half right. I even applied to U-Haul. They were looking for drivers to bring the trucks back to Michigan. There were none left here, they all went to Right to Work states.
