I have a Magnatek model 7455 in the coach that I just bought. Is it a good unit? Will it charge the engine battery, house battery, and the generator starter battery when plugged into shore power?

Also, if anyone could point me in the right direction toward information on how the charging systems work on these, I would greatly appreciate it.

Unless the coach has been equipped with a few combiners, the onboard converter/charger will only charge the house bank.

I suggest you do some serious research about the Magnatek. They supplied a lot of builders about a decade back and then there was a big recall and after that they sold or spun the business to Parallex. It is an older unit, and I would seriously doubt that it is a three stage like Iota and PD, but I can't find my book about that stuff just now.
