If I head east on 138 over to I-15 will I miss having to climb up the Grapevine, on I-5?

I don't know, but you wouldn't have any trouble going over the Grapevine in your rig. My Isabel almost left on our first go, but she's stayed with me.

And coming down your new brakes could stop a whole lane of traffic!

Hiway 138 meets the I-5 at the otherside of the summit when traveling south, so you still have to climb the 6% grade to the top (Fraizer Park-Gorman). From there the 138 is a nice ride to the I-15 and it bypasses all the nasty traffic of the city. I like the 138 as an alternate to the east side of Los Angeles, it ends close to San Bernadino.

Don't even give a thought to the grapevine. Tehachapi is a whole lot
worse.
