I'm plan to carry a couple of bicycles on the back and it occurred to me that
the spare tire mount might be a better place to hang the bikes than having
something plug into the trailer hitch socket. Is there something readily
available that will accomplish this?

My PO had a two bike rack on the coach when I bought it. The rack was mounted to the front bumper. I imagine it might be attached to the rear bumper but would need modifications to get around the spare tire. I would bet he bought it at Campers World.

I got two pairs of them from you and carry two of these bikes on them:

We carry the Ragusa fold out carrier arms that mount on the rear ladder.
I'm not sure how heavy your bikes are, but I have seen people carrying
1-2 on them.
When not in use, it folds away and does not look cluttered.

I have a rack like this that I mount on the Towd's spare. (A Sidekick.) Works very well. I have never mounted it on a GMC.
I have also used some plastic arms that mount to the ladder to carry a bike and a few chairs. You can find those at Camping World. They do not look as good as the Ragusa ones from JimK, but have a "locking" feature.

Whatever you do, keep the bike wheels HIGH off the ground when installation
is completed. If you were to back up and the wheels were to be below a high
curb or similar, you might end up with bicycle tires bent at 90*

I use Yakima similar to this I got off CL. A poorly designed bike rack is a big headache since they are usually the last things the kids want loaded and by then I'm pretty wore out.
