According to the Owner's Manual for the "Jimmy Motor Homes" 1978 Coachmen coaches, the dinette seats are "three way".

"THREE-WAY DINETTE SEAT
To change seat direction, pull out the handle; lift and rotate backrest to face in other direction. Press down on seat and push in on the handle. Test the seat to make sure it is locked in place. The front dinette seat is not designed to be occupied while traveling."

Does anyone's actually do this?

Ours makes into the bed, but you can't 'rotate the backrest' (like on a commuter train), to face the other direction. Or isn't that what they mean.
