My American Appliance 6 gal water heater will scald you both when using engine coolant and when pluged in to 120 volt power. I know why the engine gets it too hot and we deal with that. My thermostat on the water heater has gone bad and will not open until it reaches the 190 degree safety limit. I cannot find a replacement with 190 high limit. The Home Depot, etc. stores for home water heaters use a high limit of 170 degrees and I know some people have the problem that when they pull into camp ground the 120 v won't heat because the high temp limit is kicked out. Does anyone have a source for the higher safety 190 degree thermostats?

The 120v thermostat in my 79 GMC MH was the same after I tried it out. My fix was to install an adjustable thermostat (cost $15 cnd). Got it from a local electrical distributor.

We had the same deal where the high limit was kicked out after the engine heated the water over the 170 limit. After Sue got too many cold showers I found on Ebay a NOS thermostat with a 190 high limit with a 170 range and adapted that to work. Pic here

There seems to be some different rules on residential or commercial temperatures.

To avoid scalding you can install a thermostatic mixing valve at the water heater. This valve mixes dangerous hot with cold to produce safe hot water.

Such a valve is #5847T75 on Mcmaster Carr's web site page:

Similar valves are available at plumbing supply houses. Not sure if they are available at big box stores.

They will reduce the chance of a burn from scalding water.

Steve,

Can that valve be mounted just downstream of the hot water heater to serve
the shower, lavatory, and kitchen faucets? Or must one be located at each
point-of-use?

The McMaster Carr catalog indicates that one is intended for use at a faucet. However the ones they show for mounting at the heater are considerably larger than is needed for a motor home. The one I noted is a more appropriate size for a motor home and would work quite well at the heater. I haven't got that far yet but I will be installing one at the water heater on our coach. Someone else here (GMCnet/forum) has done this and wrote about it and I placed it on my todo list.
