I added a spray faucet to my house kitchen sink, and was able to drill through the stainless sink there with a bi-metal (good quality like a Starret, Milwaukee, etc.) hole saw in a hand drill pretty easily. So that would be one way to use a conventional kitchen faucet.
Also, on my 1977 Kingsley, the original faucet was a Moen, and the local independent hardware store had a rebuild kit on the shelf for it a year or two back. I don't particularly like Moen faucets, and will probably be hole-sawing away at it one of these days. I've seen a number of coaches that have the sink turned sideways in them to gain a wider counter space and kind of like that idea.
