Looking on the web, we found a few faucets for RVs, but they all needed 3
holes. When Alan took our broken one out, he said that there is only 1
hole, so none of the RV ones would work. So we started to look at normal
kitchen faucets, but have some concerns about the depths of the sinks.

Anyway, any suggestions / recommendations would be greatly appreciated!

The original one hole single lever faucet is probably a Moen. Unless its totally broken the cartridge kit to fix it is less than $20. That said we have been thinking about a faucet with a higher spout Like a Delta 182.
