Checking bearings, brake temperatures, engine temperatures, hot water heater temperatures, confirm accuracy of thermometer on any heating device.

It's just a generally all around useful thing. Most important for me is for checking bearings. Just shoot the temp of each bearing. It they are approximately the same you are good. If one is significantly higher you have a problem.

Checking brakes. If one is significantly higher or lower you have some type of problem that needs to be investigated.

Is you engine really as hot/cold as your gage indicates. Is your thermostat working properly. Just shoot the engine outlet fitting to the radiator.
