The front seat belts are longer than the typical sedans of that era. Current longer belts from more modern vehicles include the 'across the shoulder' belt. The GMC has no OEM shoulder belt attachment point. JmK has an attachment point available You could go that route.
Otherwise, perhaps search the web for a custom seat belt company. You can easily remove the front seat belts next to the engine hatch. The outer belt attachment points are easier to address with the wheel liners removed.
Rear seat belts from the men's mall should address the dinette area. Get new Grade 8 bolts for your piece of mind.
