Thanks Sean for the updates and details. Will take a good look at your schematic - thanks for that.
Counting my lucky stars today as I am a 1/2 mile from the epicenter of a pretty decent earthquake we had last night and my wheel-less GMC managed to stay planted on the four sets of cribbing in the garage. Coulda been ugly. Good news is we got rid of some knick-knacks that were past their prime, only hassle was a broken water supply line in the house.
Anyway, I thought a lot about the LOP switch set-up and I think I'm going to try using an electronic solution that utilizes a tach signal to switch the pumps on or off and also features a 3 second prime feature when you first turn the ignition on. Here's what I'm thinking about:

And I think I'll also add a fuel pressure gauge on the dash to keep track of the in-tank pumps.
Now back to fixing things non-GMC related.
