Does anyone have any recommendations for an instant water heater, either gas
or electric?

Dean, I have the Girard tankless gas water heater. I’ve had it for 6 years now with no issues. The newer models are even better. Jim K at Applied ordered it for me.

Dean,.
There are two options:
first is to get an Tankless LPG water heater at a Hdw store and mount it
behind the Refrigerator.
Second is to have me quote a RV certified Tankles unit.
As a RV shop, we do not use the Hdw units as they are not approved for RV

I can tell you about a failed electric installation that I did on an owners boat at his insistence.
It drew all 30Amps that marine powers have, and it could not make the tank water warm enough for a shower, wash hands - Maybe.....
About the time that you got the flow low enough to make the water notably warm, it would shut down.

I prefer the factory setup. You have instant hot water upon arrival and a more mild electrical draw that even a 15A Edison outlet can support. Should the element fail, just idle the engine for a bit and shower.
Seems like lots of sensors and logic boards to fail on new units and calcium deposits kill them after a few years. I would think sitting with disuse would lead to quicker oxidation. Sorry for the lack of help but simple wins for me.

I agree that the factory setup is good for all the reasons you mention.
I like the setup I have been using successfully for the past 11 years. I installed a (so called Hardware store) tank-less water heater behind my reefer running on LP gas. I elected to keep the original factory setup (I did replace the original tank with a stainless steel tank in 2003) plumbed so that I can choose between the factory system (electric and engine heated) and the LP gas tank-less unit.
We can make hot water with LP gas, 120 VAC (shore power or Onan)or engine coolant heat. If staying overnight at Walmart or camping without electric we can shower with the tank-less. If at campsite with electric we can use the factory system. I bought a spare tank-less unit in case the original one dies. It was only ~$150 for the units on Ebay, but of course lots of my time installing it.

I do have an automatic fire extinguisher in the cabinet and I lined it with sheet metal and have a proper flue. I don't really miss the "breathing room behind frig" where I used to store oil and stuff.
