Rob,
I build a similar unit to shut down commercial two-way radios we install into vehicles and equipment. The customers like to have the radios ON all day, but don't like the dead batteries if the radio was not turned OFF over a weekend.
Its a relatively simple device that monitors the vehicle voltage. When it detects the engine is turned OFF, it starts a timer which leaves the radio ON for a preset time, or until the battery voltage drops to a preset level which is dependent on the ambient temperature (for winter time). I've sold a few to GMCer's.
I have one in-line to the house 12V fuse panel in case I leave some turned ON, it will power OFF before the battery voltage drops below a set level.

The unit you refer to senses battery voltage and disconnects if it drops below a set level. You must then manually press a button on the unit to reset it. Its a great idea.

But we have side terminal batteries. Hanging more stuff on the terminals adding leverage to road vibration is a bad idea and can cause case leaks at the terminal. Never needed to jump and if I did I just exercise my finger tip on that dash boost button.

Rob,
My 2 cents:
When I'm using the coach more regularly, I keep a Battery Tender on it so I don't have to shut down everything. I take it with me on trips as well.
When I'm not--the PO had one of those "hot rod" engine kill switches installed (they type with the plastic key). That cuts off any possible drain to the chassis batteries.
Although I AM a gadget guy, and that looks cool!!
