That one should work well, Rob.

The inverter microwave units are the ones that modulate the output of the magnetron to go to less than full power while the others turn it on and off during each minute to go to less than full power. If a non-inverter microwave unit will not run off of the coach inverter it usually means that the coach inverter is too small (should be atleast 50% higher continuous watt output than the name plate watt draw shown on the microwave), or the wire from the battery to the coach inverter is too small or too long (should be at least 2 gage and better yet 0 wire gage on both the positive and negative lines and as short as possible), or is not a true sine wave output inverter which some microwaves require. Some will accept square wave inverter output power and some won't.

More batteries will only provide longer run times. I am not suggesting you forego more batteries, just cautioning that more batteries alone will likely not fix the issue you described of the macro wave drawing voltage too low, too quickly.
